Make a portion of rice porridge and let it cool completely in the fridge.

In a pot, add 500 grams of sweet cherries, 0.5 deciliters of kirsch, 1 tablespoon of amaretto, 120 grams of sugar, the juice of 1 lemon, the juice of 1 orange, 2 split vanilla pods, and the zest of 1 orange and 1 lemon.

Bring the mixture to a boil.

Let it simmer for 20 minutes.

After 20 minutes, turn down the heat to almost zero and remove the vanilla pods and zest.

Dissolve 1 tablespoon of cornstarch in some water and add it to the sauce, ensuring it isn't boiling.

Stir gently to distribute the cornstarch, then bring it to a boil and let it simmer for 2-3 minutes more.

Pour the sauce into a scalded jar and seal it while still warm, then let it cool on the counter until handleable before refrigerating.

To make vanilla sugar, split 2 vanilla pods and scrape the seeds into 2 tablespoons of sugar, mixing well.

Whip 500 milliliters of whipping cream to soft peaks.

In a bowl, add the cooled rice porridge and top it with the vanilla sugar.

Add one third of the whipped cream into the porridge and mix to loosen it.

Fold in 100 grams of roughly chopped almonds.
