Combine 100 g of crème fraîche with 1 teaspoon of lemon zest, 1 teaspoon of lemon juice, and 1 tablespoon of freshly chopped dill.
Season the mixture with a pinch of black pepper and mix well.
Set the lemon dill crème fraîche aside.
Add a little olive oil to a skillet over medium heat.
Toast the blinis in the skillet for about 1 minute on each side until warm and slightly crisp.
Top each blini with a dollop of the lemon dill crème fraîche.
Place a small piece of smoked salmon on top of each blini.
Optionally, add more dill or a sprinkle of lemon zest on top for extra flavor.
