Caribbean Oven Baked Oxtail Stew

Avocado oil offers health benefits while being a cost-effective option.
Wash and clean the oxtail, then pat dry.
Add oil to a bowl, followed by soy sauce, hot pepper sauce, chopped garlic, and green seasoning.
Add garlic powder and all-purpose seasoning to the mixture.
Chop mixed peppers, red onions, spring onion, and tomatoes, then add to the bowl.
Add black pepper, pimento seeds, and thyme to the mixture.
Massage the mixture into the oxtail, cover, and marinate in the fridge for about two hours or overnight.
Preheat a pot with oil, then brown the marinated oxtail for about eight minutes, turning them over during cooking.
Remove the vegetables from the oxtail and set aside.
Deglaze the pan with rich beef stock (or hot boiling water).
Add the reserved vegetables back to the pan and stir, letting it simmer for about 10 minutes.
Cover and place the mixture into a preheated oven for three hours.
After three hours, optionally remove excess fat from the dish.
Add final vegetables: carrots, onion, Scotch Bonnets, and fresh thyme.
Add more green seasoning and stir to combine flavors.
Add a bit more hot water for gravy, cover, and return to the oven for an extra half hour before adding butter beans and sauces.
Test for seasoning, then return to the oven for another half hour.
