1 cup Split Pigeon Peas (Toor Dal), skinless
250 g Tomatoes, diced
1 tsp Mustard Seeds
½ tsp Fenugreek Seeds
3 Dried Red Chillies
A pinch of Asafoetida
3 Green Chillies, slit
8–10 Curry Leaves
½ tsp Turmeric Powder
2 cups Water
2 tbsp Oil
Salt, to taste
Coriander Leaves, chopped

Rinse the red lentils under cold water until the water runs clear.

In a pot, add the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for about 20 minutes until the lentils are soft.

In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.

Add the chopped onions and sauté until they turn golden brown.

Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant.

Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes soften and the oil separates from the mixture.

Combine the tomato mixture with the cooked lentils. Stir well and adjust the consistency with water if needed.

Simmer for an additional 5-10 minutes to allow the flavors to meld together.

Garnish with fresh coriander leaves before serving.
