Turkey Breast with Roasted Garlic

Set up the barbecue and light the charcoal using a grill gun.
Once the charcoal is ready, shut the lid and open the vents to reach a temperature of 180°C (350°F).
Prepare the stuffing by melting 2 tablespoons of butter in a pan over medium to high heat.
Add 1/2 finely chopped brown onion and 1/2 finely chopped green pear to the pan and caramelize for about 5 minutes.
Add a handful of lightly crushed walnuts and a small amount of breadcrumbs to the pan, stirring until it reaches a stuffing consistency.
Turn off the heat and let the stuffing sit for 5 minutes.
Butterfly the boneless turkey breast by slicing halfway through and then almost to the other side.
If desired, use cling wrap and a meat tenderizer to flatten the turkey breast further.
Spread a generous amount of cranberry sauce over the turkey breast, then add the stuffing mix evenly on top.
Roll the turkey breast up and secure it with kitchen twine, tying it tightly in the middle and adding additional ties if necessary.
Season the rolled turkey breast with garlic goals all-purpose rub.
Place a small chunk of peach wood on the barbecue, then add the turkey breast on the cooking grate.
Close the lid and cook for approximately 2 hours, or until the internal temperature reaches 74°C (165°F).
After cooking, remove the turkey breast from the barbecue and let it rest for 10 minutes before slicing.
