Roast turkey breast is a beloved dish in Greece, often prepared for festive occasions and family gatherings. Traditionally, it symbolizes abundance and celebration, especially during holidays. While turkey is not as commonly used in everyday Greek cuisine, its popularity has grown, particularly in modern holiday meals, where it is often served alongside seasonal vegetables and rich gravies.

Prepare a stock pot large enough to hold the turkey breast and a brining bag.
Add 7 quarts of water to the stock pot.
Dissolve 1.5 cups of kosher salt in 1 quart of water by bringing it to a high simmer.
Add 6 bay leaves, a bunch of fresh thyme, 2 teaspoons of dried coriander, 2 tablespoons of black peppercorns, 2 teaspoons of fennel seeds, and 1 teaspoon of mustard seed to the brine.
Include sliced apples, lemons, and oranges to the brine for flavor.
Add 6 smashed garlic cloves to the brine mixture.
Rinse the turkey breast and remove any internal gravy packet.
Place the turkey breast into the brining bag and add the onions, apples, and oranges.
Cool the brine mixture with an additional quart of water before adding it to the turkey.
Pour the brining solution over the turkey in the bag and add 1 cup of apple juice.
Seal the brining bag and refrigerate overnight.
Prepare 4-5 sage leaves for garnish and chop 1 tablespoon of sage.
Slice 2 oranges thinly and set aside in the fridge.
Make herb butter by mixing orange zest, 1 teaspoon of cracked black pepper, chopped sage, and 1 teaspoon of salt with 1/2 stick of butter.
Rub the herb butter under the skin of the turkey breast after rinsing and patting it dry.
