Roast turkey breast is a beloved dish in Greece, often prepared for festive occasions and family gatherings. Traditionally, it symbolizes abundance and celebration, especially during holidays. While turkey is not as commonly used in everyday Greek cuisine, its popularity has grown, particularly in modern holiday meals, where it is often served alongside seasonal vegetables and rich gravies.

Season the turkey breast half with kosher salt and let it chill in the fridge overnight.
Preheat the oven to 450°F (232°C).
Drizzle grapes with extra virgin olive oil and sprinkle with kosher salt, then roast in the oven for 15 minutes.
Mix together one teaspoon allspice, one teaspoon paprika, and half a teaspoon nutmeg with black pepper in a bowl.
Rub the spice mixture all over the turkey breast, including underneath the skin.
Mince about 10 to 14 garlic cloves and mix with one-third to half a cup of extra virgin olive oil.
Rub the garlic and olive oil mixture underneath the skin of the turkey and on the skin.
Cut seven shallots in half and place them in the roasting pan as a bed for the turkey.
Place the turkey breast on top of the shallots in the roasting pan.
Turn the oven down to 350°F (175°C) after placing the turkey in.
Roast the turkey for about 45 minutes, covering it if the skin gets too dark.
Add the roasted grapes back into the oven to warm through before serving.
