Preheat the oven to 350°F (175°C).
Pat the turkey breast dry with paper towels.
Rub the turkey breast with olive oil, ensuring even coverage.
Season generously with salt and black pepper.
Chop garlic, rosemary, and thyme; mix and rub onto the turkey breast.
Squeeze lemon juice over the turkey and place lemon halves inside the cavity.
Place chopped onion, carrots, and celery in a roasting pan.
Set the turkey breast on top of the vegetables in the pan.
Pour chicken broth into the pan, adding bay leaves.
Sprinkle paprika over the turkey for color.
Roast in the preheated oven until the internal temperature reaches 165°F (74°C), about 1.5 to 2 hours.
Baste the turkey occasionally with pan juices for moisture.
Remove from the oven and tent loosely with foil; let rest for 15-20 minutes.
Slice and serve garnished with fresh parsley.
