Mix water and salt in a large bowl to create a brine.
Add the turkey breast to the brine and let it soak for 4 hours in the fridge.

Liberally rub neutral flavored oil on the surface of the turkey.
Bake the turkey in the oven at 325°F for about 30 minutes.
In a medium saucepan, combine all ingredients for the sauce: cranberry sauce, soy sauce, honey, butter, garlic, and ginger.
Turn on the heat and cook the sauce until slightly thickened, stirring constantly, then let it cool.
Remove the turkey from the oven and increase the temperature to 450°F.
Brush the sauce all over the surface of the turkey, or use a spoon to apply it.
Return the turkey to the oven on the top rack at the higher temperature for 2 minutes, then repeat this process twice, watching carefully to avoid burning.
Let the turkey rest for 10 minutes before slicing it on a cutting board.
Serve the turkey with green vegetables, mashed potatoes, rice, or anything you like, and pour the remaining sauce over or serve it on the side.
