Bobotie with Yellow Rice

Preheat the oven to 350°F (175°C).

Add ground beef and cook until browned, breaking it apart with a spoon.
Stir in curry powder, turmeric, salt, and pepper; cook for 2-3 minutes.
Mix in the soaked bread, apricots, and lemon juice until well combined.
Transfer the mixture to a baking dish and smooth the top.
Beat the egg with reserved milk and pour over the meat mixture.
Place bay leaves on top and bake for 30-40 minutes until set and golden.
While baking, prepare yellow rice by cooking rice with turmeric and salt in boiling water until tender.
Fluff the rice and serve alongside the bobotie, garnished with almonds.
