Bobotie is a traditional South African dish with roots in the Cape Malay community, blending flavors from various cultures. It is often served at family gatherings and special occasions, showcasing the rich culinary heritage of South Africa. Today, bobotie is enjoyed worldwide, with many variations incorporating local ingredients.

Preheat the oven to 350°F (175°C).
Soak the bread in milk until soft, then squeeze out excess milk.
In a skillet, sauté chopped onion, garlic, and ginger until translucent.
Add ground beef to the skillet and cook until browned.
Stir in curry powder, turmeric, salt, and pepper, cooking for 2-3 minutes.
Mix in chopped apricots, almonds, and lemon juice.
In a bowl, combine the soaked bread, remaining milk, and egg, then mix into the beef mixture.
Transfer the mixture to a greased baking dish and smooth the top.
Place bay leaves on top of the mixture.
Bake in the preheated oven for 30-40 minutes until set and golden.
Remove from the oven and let rest for 10 minutes before serving.
