Bobotie

1 kilogram minced meat
2 slices white bread
400 ml milk
2 cloves garlic
1/2 teaspoon ginger
2 bay leaves
sun-dried tomato
Mrs Balls chutney
tomato sauce

Cut the edges off the white bread and break it into small pieces or cubes.

Soak the bread in 400 ml of milk for about 20 minutes.

Chop the onion not too fine but not rough.

Smash 2 cloves of garlic to open the shell.

Grate or chop 1/2 teaspoon of ginger finely.

Heat a skillet and add a little drop of olive oil.

Add the chopped onions to the skillet and sauté until brownish.

Add 2 bay leaves and some sun-dried tomato (optional) to the onions.

Add the smashed garlic and ginger to the skillet and mix well.

Add the minced meat to the skillet and mix it with the onion mixture, simmering on medium to low heat for about 10 minutes.

Remove the mixture from heat and transfer it to a bowl.

Squeeze out as much liquid from the soaked bread as possible and add it to the bowl with the mince mixture.

Add Mrs Balls chutney and tomato sauce to the bowl and mix everything together until solid and flat.

Cover the dish with tinfoil and place it in a pizza oven or regular oven at 180°C (355°F) for 30 minutes.

Prepare the savory custard by whisking together 2 eggs and about 350 ml of remaining milk.

After 30 minutes, remove the dish from the oven and pour the savory custard on top, covering the whole dish.

Place bay leaves on top for decoration.

Return the dish to the oven for another 15 minutes or until the custard is brown and stiff.
