Bobotie

5 pieces white bread
1 part milk
1 part water
3 carrots
onion

3 bay leaves
turmeric
cayenne pepper
cinnamon
ground ginger
curry powder
vinegar
raisins
minced meat
6 eggs

Roughly chop the onion.

Add a little oil to the pan and fry the onions until golden.

Soak 5 pieces of white bread in a mixture of 1 part milk and 1 part water.

Grate 3 carrots.

Add 3 bay leaves to the pan with the onions.

Add spices: 2 teaspoons turmeric, 1 teaspoon cayenne pepper, 1 teaspoon cinnamon, 1 teaspoon ground ginger, and lots of curry powder.

Grate garlic into the pan.

Add vinegar and chutney to the mixture.

Add raisins and sultanas for sweetness.

Add minced meat to the pan and fry until cooked, then set aside to cool.

Squeeze out the liquid from the soaked bread.

Add 6 eggs to the bread and mix well.

Brush one sheet of filo pastry with melted butter and fold it over to create two layers.

Cut the pastry to fit your container and press it in.

Combine the egg and bread mixture with the minced meat and spoon it into the containers.

Mix two more eggs with cream and pour over the top of the filling.

Season with salt and pepper and add bay leaves on top.

Bake in the oven at 180°C for about 30 minutes until the top is set and golden.
