Canola oil
3 onions
1 tablespoon Garlic
100grams dried Apricots
½ cup seedless raisins
½ cup peach chutney
¼ cup brown vinegar
3 slices white bread
½ cup milk
½ cup Almond flakes
1½ cup beef stock
Salt & pepper
2 tablespoons Mild curry powder
1 teaspoon HOT curry powder
½ tablespoon dried ginger
2 tablespoons Turmeric
1 teaspoon cinnamon
½ tablespoon dried coriander
1 teaspoon Allspice
300ml milk
3 eggs

Preheat the wood-fired oven.

In a large pan, heat canola oil and sauté the onions until translucent.

Add garlic and cook for another minute.

Stir in the minced beef and cook until browned.

Add the dried apricots, seedless raisins, peach chutney, brown vinegar, and beef stock to the pan.

In a bowl, soak the white bread in milk, then crumble it into the meat mixture.

Season with salt, pepper, and the spices: mild curry powder, hot curry powder, dried ginger, turmeric, cinnamon, dried coriander, and allspice.

Mix everything well and transfer to a baking dish.

In another bowl, whisk together the milk and eggs for the custard topping.

Pour the custard over the meat mixture and top with almond flakes and bay leaves.
