Fried Calamari

1 lb squid, cleaned and sliced into rings
1 cup buttermilk
1 tablespoon Frog Bone all-purpose seasoning
1/2 cup masa harina
1 cup all-purpose flour
Vegetable oil for frying (cottonseed oil)
1 lemon, cut into wedges
1 cup marinara sauce

Clean the squid by cutting off the tentacles and pulling out the innards.

Remove the skin from the squid.

Cut the squid into 1/4 inch rings.

Soak the squid in buttermilk for at least 1 hour to tenderize.

Mix 50/50 Masa Harina and all-purpose flour in a bowl.

Add Frog Bone all-purpose seasoning to the flour mixture and mix well.

Heat cottonseed oil in a deep fryer.

Coat the marinated squid in the flour mixture.

Fry the squid in the hot oil for 1 to 2 minutes until golden brown.
