Fried Calamari

1 cup buttermilk
2 large eggs
1/4 teaspoon salt
2 pounds calamari rings
1 cup flour
1/2 cup cornstarch
salt (to taste)
black pepper (to taste)
garlic powder (to taste)

store-bought salsa
parsley (for garnish)

Pour 1 cup of buttermilk into a large bowl.

Add 2 large eggs and 1/4 teaspoon of salt to the buttermilk and stir.

Add the pre-washed calamari rings to the buttermilk mixture and stir to ensure they are fully covered.

In another bowl, combine flour, cornstarch, salt, black pepper, and garlic powder, and stir until well combined.

Set the calamari aside to marinate for about 20 minutes.

Chop sweet medley peppers and set aside.

Pour some of the buttermilk mixture over the chopped peppers to coat them.

Transfer the coated peppers into the flour and cornstarch mixture and toss to coat.

Fry the coated peppers in the hot oil for about 3 minutes until they are crispy but not browned, then remove and set aside.

Fry the calamari in batches, ensuring they are separated to avoid sticking, for about 6 minutes until golden and crispy.

Remove the fried calamari and place them on a paper towel to drain excess oil.

Arrange the fried calamari on a plate, placing smaller rings at the bottom for presentation.

Garnish the calamari with chopped parsley and serve with store-bought salsa.
