500 g corn flour

Prepare the dipping mix by adding 200 g of corn flour to a bowl.

Add 1 teaspoon of salt, a little chili powder, 1/2 teaspoon of black pepper, a little white pepper (1/4 to 1/2 teaspoon), and 1/4 teaspoon of garlic granules to the corn flour and mix well.

Wash and clean 3 squid thoroughly, then slice them thinly into strips.

Heat grape seed oil in a pan until hot.

Coat the squid pieces in the corn flour mixture, ensuring each piece is well coated.

Fry the squid in batches in the hot oil, monitoring closely as they only take a couple of minutes to cook.

While the squid is frying, wash and thinly slice 8 to 10 spring onions and chop 1/2 chili.

In another pan, heat 2 tablespoons of olive oil and add the spring onions, chopped chili, and sliced garlic cloves.

Stir-fry the spring onions, chili, and garlic on high heat for a couple of minutes until the edges are golden.

Once the squid is done frying, combine it with the stir-fried spring onions, chili, and garlic.
