Fried Calamari

1 lb (450g) fresh calamari
1 cup semolina flour
1 cup 00 flour
Salt, to taste
1 lemon, cut into wedges
Sunflower oil, for frying

Rinse the calamari under cold water. Remove the fins, outer skin, and tentacles. Cut the bodies into 1/2-inch rings.

In a bowl add in the calamari rings and tentacles, along with a mix of the semolina flour and 00 flour. Toss well to coat and shake off any excess flour.

Pour enough oil into a deep pan to fully submerge the calamari and heat it up.

Fry the calamari in small batches for about 2 to 3 minutes, or until lightly golden and crisp. Avoid overcrowding the pan to keep the coating light and crunchy.

Transfer the calamari to paper towels to remove excess oil. Season immediately with a pinch of sea salt.

Serve hot with lemon wedges.
