Servings4
3/4 cup all-purpose flour
1 tablespoon finely ground cornmeal
1/2 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon baking powder
1 pound squid
buttermilk (enough to cover squid)
1

In a bowl, combine 3/4 cup all-purpose flour, 1 tablespoon finely ground cornmeal, 1/2 teaspoon black pepper, 1 teaspoon salt, and 1/2 teaspoon baking powder. Mix well.

2

Prepare 1 pound of squid by cutting the tubes into half-inch rings and placing them in a bowl.

3

Pour enough buttermilk over the squid to cover them completely. Let them marinate in the buttermilk for at least 4 hours, or overnight if desired.

4

After marinating, drain the excess buttermilk from the squid, leaving some on for the breading to stick.

5

In a deep fryer or a sturdy skillet, heat oil to 350 degrees Fahrenheit. Use a candy thermometer for accuracy.

6

Coat the squid rings in the flour mixture, ensuring they are well covered but not clumpy.

7

Carefully drop the breaded squid into the hot oil, avoiding overcrowding the fryer. Fry in batches of 8 to 12 pieces at a time.

8

Fry the squid for 2 to 3 minutes until they are golden brown and crispy. Use a fork to separate any pieces that stick together during frying.

9

Once cooked, remove the calamari from the oil using a slotted spoon and place them on a plate.
