1

Measure 4 cups of all-purpose flour and sift it well.

2

Grate 1 nutmeg seed and add it to the flour along with 1 tablespoon of baking powder and a pinch of salt. Mix well and set aside.

3

In a mixing bowl, add 1 cup of margarine and 4 tablespoons of sugar. Mix until well combined.

4

Gradually add the dry ingredients to the margarine and sugar mixture in batches, mixing until you achieve a sandy texture. Set aside.

5

In a separate bowl, break 1 egg and add 1 teaspoon of vanilla essence and 1/2 cup of evaporated milk. Mix well.

6

Make a well in the center of the flour mixture and add the wet ingredients. Mix to form a dough without kneading.

7

Set the dough aside and prepare the filling by placing 2 cups of grated coconut in a pot.

8

Add 1 tablespoon of grated ginger (optional), 1 tablespoon of cinnamon powder (or nutmeg), 1 egg, 2 tablespoons of margarine, 1/2 cup of condensed milk, and 1/2 cup of water to the pot.

9

Cook the filling on low heat for about 5 to 6 minutes while stirring continuously until it thickens. Remove from heat.

10

Grease a muffin pan with margarine and distribute the dough into the muffin cups, leaving space in the middle.

11

Fill the center of each dough with the coconut filling.

12

Bake in a preheated oven at 350°F for 35 to 40 minutes.
