1

Start by measuring 6 cups of rice using a plastic cup.

2

Soak dry fish for a couple of hours, remove the skin, and break it into smaller pieces.

3

Season the fish with 1 teaspoon of chicken seasoning, 1 teaspoon of black pepper, and 1 teaspoon of onion powder, ensuring the seasoning penetrates the fish by creating lines on it.

4

Marinate the fish for a few hours or overnight.

5

In a pot, add 2 cups of water (from soaking the fish) with salt and bring it to a boil.

6

Add the dry fish to the pot and 1 cooking cube; cook for 10-15 minutes.

7

After that, add the okra and habanero peppers to the pot and cook for an additional 5 minutes.

8

Remove the okra and peppers from the pot and set aside.

9

Add salted pork to the pot, followed by the washed rice.

10

Add enough water to cover the rice, about 6 cups total, and cook until the water is mostly gone.

11

Add 2 cooking cubes and the previously cooked okra and peppers back into the pot with the rice.

12

Cover the pot and steam the rice until completely dry.

13

Blend the okra and peppers together and mix them into the rice, ensuring everything is well incorporated.

14

Fry the seasoned fish in hot palm oil until thoroughly cooked on both sides.

15

Remove the fried fish from the oil and plate the rice.
