Stir in desiccated coconut and vanilla extract until well combined.
Pour the coconut mixture into the tart crusts.
Bake in the preheated oven for 20-25 minutes or until the filling is set and the tops are golden.
Allow to cool before serving.
Garnish with coconut flakes if desired.
