Bell peppers add color and sweetness without heat.
Rinse the eggplant, pat dry, cut into medium thin slices, and coat with turmeric powder and salt.
Rinse and cut the banana peppers, set aside.
Cut the beef into large thin slices and rinse.
Heat a pan, add oil, and sauté the banana peppers on medium heat for 3-4 minutes.
Add 2 large onions, 2 large tomatoes, curry leaves, rampeh, red chili flakes, turmeric powder, red chili powder, salt, and Maldives fish flakes to the pan and mix well.
Fry the eggplants until cooked and set aside.
Grind 1 large tomato, 3 green chilies, curry leaves, and soaked cashew nuts into a fine paste for the kurma.
Mix the beef with black pepper powder, cumin powder, coriander powder, garam masala powder, turmeric powder, yogurt, and salt; marinate and set aside.
Cook the kurma in a clay pot with ghee or oil, adding cinnamon stick, cumin seeds, cardamom, cloves, ginger, and garlic paste.
Add the blended cashew paste and sauté for 2 minutes until oil separates.
Add the marinated beef, mix well, and cook on medium heat for 2 minutes until water is released.
Add enough water to cook the meat and a handful of coriander leaves; cook on low heat for about 1 hour.
Prepare ghee rice by adding ghee or oil to a rice cooker, sautéing cardamom, cinnamon stick, curry leaves, and onions, then adding turmeric powder and salt.
Add rinsed rice, half water, and half coconut milk to the rice cooker and cook.
Prepare eggplant curry by sautéing cumin seeds, curry leaves, onions, green chilies, and tomato, then adding turmeric powder and red chili powder.
Add thin coconut milk, then gently add fried eggplant and thick coconut milk; stir gently and cook until ready.
Serve the beef kurma with fried onions and chopped coriander leaves.
