Cook soba noodles and shock them in cold water, then add a little sesame oil to prevent sticking.
In a bowl, combine 1 cup of smooth peanut butter with 1/2 cup of soy sauce or tamari, pulsing to soften the peanut butter.
Add 2 tablespoons of rice wine vinegar, 2 tablespoons of lime juice, and 4 tablespoons of sesame oil to the bowl, then pulse again.
Scrape down the sides and add 5 tablespoons of water to thin the sauce, then mix until smooth.
Transfer the peanut sauce to a bowl and set aside.
Prepare the vegetables: peel and cut carrots into matchstick sizes, and do the same with daikon and scallions, discarding tough ends of scallions.
Toast 4 teaspoons of sesame seeds in a 350-degree oven for about 4 minutes until nutty.
In a large bowl, add the soba noodles and 3/4 cup of peanut sauce, mixing to coat the noodles evenly.
Serve the noodles in portions, adding carrots, daikon, and scallions on top, and sprinkle with toasted sesame seeds.
Serve additional peanut sauce on the side.
