1/2 red onion, chopped into small cubes
a handful of chopped parsley
20g peanuts, halved
1/2 tablespoon sesame oil
1 small red chili, finely chopped

Start by making the peanut sauce: Place 2 tablespoons of peanut butter, 1 tablespoon of soy sauce, 1 minced garlic clove, 1 small red chili (de-seeded and roughly chopped), juice from 1 lime, 1/2 tablespoon of honey or maple syrup, 1 stalk of lemongrass (roughly chopped), a small chunk of ginger (roughly chopped), and 3 tablespoons of water into a food processor.

Cook the soba noodles according to package instructions. To avoid sticking, drain and rinse with cold water, then set aside.
