1

Heat oil and butter in a pan.

2

Add chopped onions and sauté until slightly golden brown.

3

Add ginger-garlic paste and sauté until the raw taste goes away.

4

Add a little salt to extract flavors and help onions cook faster.

5

Once onions are brown, add Kasuri Methi, red chilli paste, turmeric, coriander powder, and cumin powder. Cook slightly to remove rawness of spices.

6

Add chopped tomatoes and mash them into the gravy until no chunks are visible.

7

Add water (or chicken stock for more flavor) and mix through. Let it simmer for 4-5 minutes until tomatoes are dissolved.

8

Add tomato puree for a smoother texture and a bit of honey to cut the sour taste of tomatoes.

9

Add cashew paste to enrich the gravy.

10

Add chunky tomatoes and capsicum if desired.

11

Add cooked chicken tikka and any cooked veggies. Mix well.

12

Adjust consistency by adding water if needed, then bring to a boil.

13

Add salt and a bit of cream to increase richness.

14

Add freshly chopped coriander and a dollop of butter before serving.
