1½ tbsp mustard oil
1¼ tsp paprika or Kashmiri red chili
½ tsp salt
½ tsp ginger paste
½ tsp garlic paste
½ tsp lime juice
2 tbsp plain yogurt
1 tsp oil
2 crushed cardamom
1 very small cinnamon stick
½ tsp cumin
1¼ cup roughly chopped onion
¼ tsp salt
½ tsp salt
2 finely chopped green chili
1 tsp ginger paste
1 tsp garlic paste
1¼ tsp paprika/Kashmiri chili
5 small tomatoes, cut into cubes
½ tsp turmeric
¾ tsp garam masala
1 tsp kasuri methi (dried fenugreek leaves)
1 tsp honey or sugar to taste
1 tbsp ghee
2 tbsp chopped coriander
1 tsp thinly sliced ginger

In a pan, heat 1½ tbsp of mustard oil until it smokes for about 5 seconds. Transfer to a bowl.

Add paprika, salt, ginger paste, garlic paste, lime juice, and yogurt. Mix well.

Add the chicken cubes to the marinade and let sit for 10-15 minutes.

Fry the marinated chicken for 4-5 minutes. If using a small pan, fry in batches to avoid overcrowding. Once 90% cooked, transfer to a plate.

In the same pan, add 1 tsp of oil and toss in the crushed cardamom, cinnamon stick, and cumin. Sauté for 30 seconds until fragrant.

Add chopped onions, a pinch of salt, and green chilies. Splash some water to loosen up the bits from the pan and sauté until light brown and soft.

Add water, ginger paste, garlic paste, and paprika. Mix well.

Add cubed tomatoes, salt, and turmeric. Cover and simmer on low heat for 15-16 minutes.

Once the tomatoes are cooked, blend the mixture until smooth. Strain to achieve a clean texture.

Over low heat, add garam masala, kasuri methi, and honey or sugar to taste. Mix well.

Add the reserved chicken and let it simmer for 2-3 minutes.

Add a dollop of ghee, sprinkle chopped coriander, and thinly sliced ginger. Mix well and serve.
