1

Start by making the sauce: whisk together 1/4 cup coconut aminos, 2 teaspoons fish sauce, 1 teaspoon rice vinegar, and a pinch of red pepper flakes; set aside.

2

Heat 1 tablespoon ghee in a large skillet over medium-high heat until melted.

3

Add 2 finely minced shallots to the skillet and cook for 2-3 minutes until lightly translucent and fragrant.

4

Add 1 inch nub of fresh ginger (finely minced), 2 cloves of garlic (finely minced), and 2 red chilies (finely minced) to the shallots; cook for about 1 minute until aromatic.

5

Add 1 pound of grass-fed ground beef to the skillet, breaking it up as it cooks; cook for 5-8 minutes until no longer pink and cooked through.

6

Add baby kale and baby spinach to the skillet towards the end to wilt.

7

Once the beef is cooked, pour the coconut aminos sauce into the skillet and stir; cook for an additional 2-3 minutes until the sauce reduces and thickens slightly.

8

Turn off the heat and add thinly sliced fresh basil; stir to combine.

9

Assemble the bowls: use cauliflower rice as the base, then add spoonfuls of the Thai beef mixture on top.

10

Garnish the bowls with carrot spirals, matchstick cucumbers, scallions cut into 1-inch pieces, and additional sliced red chilies if desired; serve with a fresh squeeze of lime and extra coconut aminos if preferred.
