Use about a half a pound to a pound of lobster meat, either boiling lobsters or using canned lobster meat.

Chop the firmer bottom portion of 3 scallions and add to the Instant Pot.

Add 1 tablespoon of butter to the Instant Pot and select the sauté function on high.

Once the butter is melted, add the chopped scallions and sauté for a minute.

Add 1 tablespoon of crushed garlic and stir for another minute.

Pour in 0.25 cup of dry white wine and deglaze the pot by scraping the bottom with a spatula.

Add 2 teaspoons of Worcestershire sauce and optionally 1 to 2 teaspoons of hot sauce for spice.

Add 0.5 teaspoon of Old Bay seasoning and 1 teaspoon of dry thyme, stirring for another minute.

Pour in 0.33 cup of sherry and deglaze the pot again.

Add 1 teaspoon of paprika and 0.5 tablespoon of Better Than Bouillon lobster base with 1 cup of water, stirring well.

Once it starts to simmer, add 0.75 can of tomato paste and mix until dissolved.

Add bay leaves and seal the Instant Pot.

Cancel the sauté function and select pressure cook for 2 minutes.

After cooking, perform a quick release and remove bay leaves.

Turn the sauté function back on and add 3 tablespoons of salted butter, stirring until melted.

Add 2 cups of heavy cream and let simmer for a few minutes.
