Welcome to the channel and introduce the recipe for creamy lobster bisque.
Chop 2 cups of leeks, 1 carrot, 1 large onion, and 2 ribs of celery.
Add 1 tablespoon of lobster base and 4 cloves of minced garlic to the vegetables.
Pour in 8 cups of water (or up to 10 cups) to reduce down to about 8 cups of stock.
Add 2 pinches of salt, 1/2 teaspoon cayenne pepper, 2 stems of thyme, 8 lobster shells, and 2 bay leaves to the pot.
Cover with water and bring to a boil, then reduce to a simmer for about 1 hour to extract flavors from the shells.
While the stock simmers, clean and chop the lobster meat into bite-sized chunks.
In a separate pan, melt 5 tablespoons of Kerrygold butter and sauté the lobster meat for about 3 minutes, stirring for the first minute and then covering for 2 minutes.
Remove the lobster meat and set aside, then add the chopped vegetables to the pan.
Season the vegetables with black pepper and 2 pinches of salt, cooking until tender.
Add 1/4 cup of flour to the vegetables and cook for about 3 minutes to eliminate the raw flour taste.
Deglaze the pan with 1/2 cup of dry cherry, cooking for about 2 minutes to let the flavors soak into the vegetables.
Stir in 2 oz of tomato sauce and mix well.
Strain the lobster stock after simmering for an hour and add it to the vegetable and flour mixture.
Let the mixture cook for about 20 minutes, stirring until it thickens.
Add a small amount (less than 1/4 cup) of cognac for flavor and let it cook down a bit more.
Use an immersion blender to blend the mixture until smooth, or use a stand blender with the lid cracked to prevent explosion from steam.
Stir in 1/4 cup of heavy cream, adjusting the amount based on preference for creaminess.
Let the bisque reduce with the cream for about 10 minutes to thicken further.
Plate the bisque, adding about 16 pieces of lobster meat for garnish.
Serve with a garden salad and crusty bread or oyster crackers.
