Peel and slice the potatoes into thick rounds.
Sauté onions and garlic in olive oil until translucent.
Add ground meat to the skillet and cook until browned.
Mix in spices and chopped tomatoes, then simmer for 10 minutes.
Remove from heat and let the mixture cool slightly.
Stuff each potato slice with the meat mixture.
Heat more olive oil in a large skillet over medium heat.
Carefully place the stuffed potatoes in the skillet and fry until golden on both sides, about 4-5 minutes.
Transfer the potatoes to a baking dish and drizzle with lemon juice.
Cover with foil and bake at 180°C for 30 minutes.
Uncover and bake for an additional 10 minutes to crisp the tops.
Garnish with parsley before serving.
