Preheat oven to 350 degrees F (180 degrees C) with the oven rack in the center of the oven. Line 2 baking sheets with parchment paper.

In a medium bowl, sift flour, salt, and baking soda. Set aside.

In a bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using an electric hand mixer), beat together butter, brown sugar, and white sugar on medium-high speed until light and fluffy for 3 minutes, scraping down the sides and bottom of the bowl as needed.

Add the egg and vanilla. Beat until well combined (about 1 minute), scraping down the sides and bottom of the bowl.

With mixer on low, gradually add the flour mixture and beat until just combined. Stir in the chocolate chips.

Using an ice cream scoop (1 1/2 Tbsp), scoop the dough into even balls (35 g) and place onto a lined baking sheet about 2 inches apart.

Refrigerate for at least 1 hour, then bake for 12 minutes or until the edges are golden. The tops should still look under-baked. Let cool on the pan for 10 minutes, then transfer to a wire rack. Serve warm and enjoy.
