1 tbsp oil or butter
1 small onion (80 g), very finely chopped or grated
2 cloves garlic, minced
½ tsp ginger, minced
200 ml tomato purée/passata
1 tbsp tomato paste (concentrate)
1 tsp sugar
½ tsp Kashmiri chilli powder
½ tsp cumin powder
½ tsp coriander powder
¼ tsp garam masala
¼ tsp turmeric
1–1½ tsp sugar or jaggery
1 tsp vinegar or lemon juice
¾ tsp salt (to taste)
100–150 ml water (adjust for thickness)

optional: grated cheddar, paneer crumbs, or a knob of butter
