Put 2.5 teaspoons of yeast into a bowl and add 1/4 cup of warm water. Stir and set aside until foamy.
In a saucepan, melt 1/2 cup of butter and bring 1 cup of milk to a warm temperature, then combine them.
Pour the milk and butter mixture into the yeast mixture, then add 1/2 cup of white sugar, 1/2 teaspoon of salt, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1 egg. Stir to combine.
Gradually add 4 cups of flour (using half bread flour and half all-purpose flour), starting with 3.5 cups and adding more as needed until a dough forms.
Flour your surface and knead the dough for about 7-10 minutes until it is no longer sticky.
Place the dough in a greased bowl (using extra virgin olive oil), cover with a clean tea towel, and let rise in a warm place for 1 hour.
After an hour, knead the dough for about 1 minute to remove air bubbles, then cut it in half.
Roll out one half of the dough into a thin rectangle and cut it into three equal strips.
Roll each strip from the center outwards to form ropes, ensuring they are of equal length.
Braid the three ropes together, tucking the ends under at both the top and bottom of the braid.
Repeat the braiding process with the other half of the dough and place both braids on a cookie sheet lined with parchment paper.
Cover the braids with a clean tea towel and let rise for 45 minutes in a warm place.
Whip together 1 egg and some milk in a bowl until runny, then brush this mixture lightly over the risen bread.
Sprinkle chunky sugar (pearl sugar) over the top of the bread.
Bake in the oven at 350°F for approximately 30 minutes until golden brown.
Once baked, let the bread cool and mix vanilla with icing sugar to create a creamy glaze, then drizzle over the top of the bread.
