Almond flour is gluten-free and adds a nutty flavor.
Preheat the oven to 350°F (175°C).
Grease and flour the cake pans.
In a bowl, mix 150 g flour, 1 teaspoon baking powder, and a pinch of salt.
In another bowl, cream 150 g softened butter and 150 g icing sugar until light and fluffy.
Add 5 yolks one at a time, mixing well after each addition.
Stir in 5-6 tablespoons of milk until combined.
Gradually add the dry mixture to the wet mixture, mixing until just combined.
Pour the batter into prepared pans and smooth the tops.
Bake for 25-30 minutes, or until a toothpick comes out clean.
Remove from the oven and let cool in the pans for 10 minutes.
Transfer cakes to a wire rack to cool completely.
Prepare meringue by whipping 5 proteins with 180 g sugar and a pinch of salt until stiff peaks form.
Prepare cream by whipping 200 ml cream and adding 30 g icing sugar.
Assemble layers with cream in between and on top, and decorate with 100 g nuts.
