Cumin seeds (1 tsp)
Fenugreek seeds (½ tsp)
Garlic chopped (1 tbsp)
Ginger paste (1 tbsp)
Onion sliced (1 no)
Curd (1 ½ cup)
Gram flour (3 tbsp)
Turmeric powder (½ tsp)
Red chilli powder (1 tsp)
Garam masala (½ tsp)
Salt (to taste)
Water (1 liter)
Green chilli chopped (2 no)
Potato boiled & cubed (1 cup)
Oil (1 tbsp)
Dry red chilli (2 no)
Asafoetida (½ tsp)
Red chilli powder (1 tsp)
Coriander powder (1 tbsp)
Coriander chopped (1 tbsp)
Coriander chopped (for garnish)

Place a kadai on medium flame and heat oil.

Add asafoetida, cumin seeds, fenugreek seeds, crushed garlic, and ginger paste; sauté for a few seconds.

Add the sliced onions and sauté until they turn golden brown.

In a large mixing bowl, add curd, gram flour, turmeric powder, red chilli powder, garam masala, and salt.

Add water and whisk well to make a smooth, lump-free batter.

Add chopped boiled potatoes and sauté for 5 minutes until they turn light brown; then take them out and keep aside.

Reduce the heat to low and slowly add the yogurt-besan mixture to the kadai, stirring continuously to prevent curdling; after it starts boiling, add the fried chopped boiled potato.

In a separate kadai, heat oil and add dry red chilli, asafoetida, red chilli powder, and coriander powder; mix well.

Add some kadhi to the kadai and mix well, then immediately pour the hot tempering over the prepared Aloo Kadhi.

Place a lid on top and cook for a minute until combined well.

Add freshly chopped coriander and mix well.

Serve in a bowl and garnish with chopped coriander.
