Besan (gram flour) - 3 tbsp (1/4 cup)
Dahi (yogurt) - 1 cup
boiled potatoes - 2 big
Chopped onion - 1 large
Chopped tomato - 1 large
Ginger garlic paste - 1 tbsp
Curry leaves - 10 to 15
Turmeric powder - 1/2 tbsp
Coriander powder - 1 tbsp
Red chilli powder - 1/2 tbsp
Garam masala powder - 1/2 tbsp
Cumin seeds - 1/2 tbsp
Mustard seeds - 1 tbsp
Methi seeds - 1/2 tbsp
Hing - 1/4 tbsp
Green chillies - 3 to 4
Whole red chillies - 2
Chopped coriander leaves
For tadka: mustard seeds - 1 tbsp
For tadka: whole red chillies - 2
For tadka: few curry leaves
For tadka: red chilli powder - 1/2 tbsp

Prepare the tadka by heating oil in a pan and adding mustard seeds, whole red chillies, curry leaves, and red chilli powder. Let it splutter.

In a separate bowl, mix besan (gram flour) with yogurt to form a smooth batter.

In a pot, add chopped onions and sauté until golden brown.

Add chopped tomatoes and ginger garlic paste, and cook until the tomatoes soften.

Add boiled potatoes, turmeric powder, coriander powder, red chilli powder, garam masala powder, cumin seeds, methi seeds, hing, green chillies, and curry leaves. Stir well.

Pour the yogurt-besan mixture into the pot and mix thoroughly.

Add water to achieve the desired consistency and bring to a boil.

Simmer for a few minutes, then add the prepared tadka on top.

Garnish with chopped coriander leaves before serving.
