Peel the green plantains and cut them into chunks about three quarters to an inch thick.

For the baked version, place the chunks on a baking sheet, cover with olive oil, and season with salt and black pepper.

Rub the plantains in the oil and seasonings, then bake in the oven at 375 degrees Fahrenheit for 10 to 15 minutes until slightly golden brown and mushy.

After 10 minutes, flip the plantains over and bake for another 10 minutes.

Once baked, press each piece using a tostones press until flattened, then lay them back on the baking tray.

Increase the oven temperature to 400 degrees Fahrenheit and bake the flattened plantains for another 10 to 15 minutes until crispy and golden brown.

For the fried version, heat oil in a saucepan to about an inch or two deep, then add the plantain pieces and fry on medium heat for 4 to 5 minutes until golden brown and mushy.

Flip the plantains halfway through frying to ensure even cooking.

Once fried, press the plantains with the tostones press to flatten them.

Heat the same oil to medium-high or high heat until smoking hot, then add the flattened plantains to fry again until crispy, about 1 minute.
