Zucchini is lower in calories and potatoes are more budget-friendly.

Cut both ends off the green plantains.

Slice down the rib of the plantain to peel it.

Cut the plantains on a slight angle into thick slices.

Heat oil in a frying pan over medium to high heat.

Fry the plantain slices for about 3-4 minutes until they are a nice golden color but not completely browned.

Remove the plantains and place them on a piece of wax paper.

Smash the fried plantains down using a spatula.

Return the flattened plantains to the hot oil and fry again until they are golden brown.

Remove from oil, season with salt, and optionally add garlic paste.
