Zucchini is lower in calories and potatoes are more budget-friendly.

Peel the green plantains and cut them into 1" to 1.5" thick slices.

Soak the plantain slices in lightly salted water to prevent browning if not cooking immediately.

Heat oil in a frying pan to 375°F.

Fry the plantain slices until they are light golden, then remove from oil.

Press the fried plantains to flatten them to about 1/4" to 3/8" thick.

Return the pressed plantains to the hot oil and fry until they are a darker golden color.

Remove from oil, season with salt or sazón to taste.

Serve with mojito de ajo or a dip made from ketchup and Ranch dressing.
