50g carrots, 1cm cubes
25g onions, sliced
80g cauliflower, 2cm florets
6g ginger, finely chopped
1 clove garlic, smashed
2 green chillies, slit
½ tsp cumin seeds
2 cardamom pods
1 cinnamon stick
2 cloves
4 bay leaves
20g cashew
20g raisins
8g salt
30g sugar
2g turmeric
½ tsp ghee
¼ tsp gorom moshla
30g vegetable oil

Use 200g thick chire, wash thoroughly and soak in water for 15 minutes

Strain the chire; it should be soft but not mushy

Chop 1 sprig of curry leaves roughly

Fry 50g potatoes for 2 minutes in 30g vegetable oil

Add 50g carrots and fry for 30 seconds

Add 80g cauliflower and fry for 30 seconds

Add 20g cashews and fry for 30 seconds

Add 25g sliced onions, 6g ginger, 2 slit green chillies, and 20g raisins, fry for 30 seconds

Add 1 sprig curry leaves, smashed garlic, 8g salt, 30g sugar, and 2g turmeric; cook until the raw smell of turmeric goes away (about 3 minutes)

Fold in the soaked and drained chire gently, taking care not to break it

Cover and steam on the lowest possible heat for 6 minutes

Add ¼ tsp gorom moshla and ½ tsp ghee, cover and rest for 2 minutes
