Rinse 3/4 cup of rice under running water until the water becomes clear. Leave the rice soaked in water for 2-6 hours to eliminate arsenic.

In a preheated pressure cooker or a thick-bottomed pot, add vegetable and butter. Sear large pieces of meat in portions, transferring the cooked pieces to a separate container.

Place a whole onion, carrot, 2 cloves of garlic, bones, and seared meat in the pot. Pour in three and a half liters of water. Bring to a boil, remove the foam. Cover and cook for 1.5-2 hours in a pot or 45 minutes in a pressure cooker.

Remove the vegetables and bones, strain the broth through a sieve. Cut the meat into small pieces and place it back into the pot. Bring the broth to a light boil and add a couple of bay leaves.

In a heated skillet, add vegetable and butter, stew finely diced onions. Add 4 teaspoons of khmeli suneli, 1 cup of tomato sauce, 3 tablespoons of tkemali, adjika to taste, and 1 teaspoon of salt. If the adjika is spicy, add 3-4 teaspoons for a spicy soup.

Transfer the skillet's contents into the broth, add 3 teaspoons of salt, 1 teaspoon of sugar, and rice. Chop cilantro and parsley coarsely, finely chop 3 cloves of garlic. Add herbs and garlic to the soup. Turn off the heat and cover for an additional 10-15 minutes. Leave a little greenery for sprinkling the soup when serving.
