Gather all ingredients: gluten-free flour, cornstarch, egg, milk, melted butter, vanilla extract, and any optional add-ins.
In a bowl, combine 1 cup and 2 tablespoons of gluten-free flour and the cornstarch.
Whisk the dry ingredients together until well mixed.
Crack 1 egg into the bowl, then add milk, melted butter, and vanilla extract.
Stir the mixture until just combined, leaving some lumps for texture.
If desired, add more flour for thickness, but do not overdo it.
Heat a griddle over medium heat and spray with Pam or grease with butter.
Pour pancake batter onto the griddle and cook until bubbles form on the surface.
Flip the pancakes when bubbly and cook until golden brown on both sides.
For waffles, grease the waffle iron and pour in the batter, then close and cook until crispy on the outside and soft on the inside.
