Peel the winter melon.
Cut the winter melon into four large wedges.
Remove the soft seedy center from the winter melon.
Slice the winter melon into thick slices about the thickness of a coin.
Place the slices into a bowl.
Add one spoon of salt and mix with your hands to draw out the moisture.
Set aside the winter melon slices.
Prepare a handful of scallions and chop them into small pieces.
Set aside the chopped scallions.
Prepare half an onion and slice it into thin strips.
In an empty bowl, add one bowl of flour, one spoon of salt, and one spoon of Chinese 5 spice.
Pour in a bit of water and stir with chopsticks until the flour becomes crumbly.
Gradually add more water, mixing until the batter is smooth and fully combined.
Mix until you get a thick batter.
Crack in two eggs and stir again until the eggs and batter are fully blended.
Add the chopped scallions to the batter and mix again.
Remove the winter melon slices from the bowl and place them on a plate.
In an empty plate, add two spoonfuls of flour and coat each winter melon slice with flour on both sides, shaking off the excess.
Dip the floured slices into the batter, using chopsticks to press gently so the slices are coated with a thin layer of batter and scallions.
Prepare an electric griddle and brush it with a layer of oil.
Place the battered winter melon slices onto the griddle one by one, leaving space between them.
Drizzle a little oil on top of the slices to lock in the moisture.
Cover and cook for 2 minutes.
Remove the lid and check if the bottom of the winter melon is set and lightly golden.
Flip each piece and cook the other side until golden, about 1 minute.
After a minute, flip again until both sides are golden and crispy.
Remove the slices from the griddle and place them on a plate.
