2 tablespoons vegetable oil
4 cloves garlic
1 tablespoon ginger
4 white parts of scallion
2 tablespoons soy sauce
2 tablespoons dark soy sauce
1/2 teaspoon white pepper
1/2 cup water
1 star anise (optional)
1 teaspoon salt

Pick a firm wintermelon without any discoloring or soft spots.

Wash the wintermelon clean.

Trim off the outer layer of the wintermelon using a knife, removing any tough or green parts.

Cut the wintermelon into chunks about 1 to 1.5 inches in size.

Heat oil in a wok over medium heat.

Add the wintermelon pieces to the wok and lightly brown them on both sides for about 3 minutes per side.

Add garlic, ginger, and the white parts of the scallion to the wok and let them sizzle in the oil for about 1 minute or until fragrant.

Stir in oyster sauce, dark soy sauce, and white pepper, mixing everything well.

Add water and star anise (if using) to the wok.

Cover and simmer for 10 to 12 minutes or until the wintermelon is fork tender.

If there's too much liquid after 10 to 12 minutes, turn up the heat and stir for a couple of minutes to reduce and thicken the sauce.
