Peel the ginger using a spoon or small knife and cut it into small pieces about an inch to an inch and a half in length.

Add the peeled ginger into a blender with enough water to cover it and blend on high until smooth.

Add one stick of cinnamon, a couple of cloves, and two pieces of orange peel into a large jug.

Pour the blended ginger mixture into the jug with the cinnamon, cloves, and orange peel.

Add more water until the mixture comes to the top, cover, and place in a cool dark place for at least 24 hours, ideally 2 to 3 days.

After 2 to 3 days, pour the mixture through a strainer to separate the solids from the liquids.

Press the pulp with a spoon to extract any trapped liquid.

Pour the liquid into a jug and sweeten with sugar, stirring until dissolved.

Add more water to adjust the spiciness to taste and stir.

Serve chilled over ice.
