Scrub the fresh ginger and leave the peel on.

Cut the ginger into small pieces.

In a pot, add 2 cups of water and the spices (cinnamon stick and a few grains of cloves).

Allow the water with spices to brew for a bit.

Blend the ginger with about 8 cups of water until smooth.

Add the blended ginger to the flavored water in the pot.

Bring the mixture to a simmer for about 3 to 4 minutes, then turn off the stove.

Add 3 cups of brown cane sugar and 1/4 cup of lemon juice to the pot, mixing until dissolved.

Pour the mixture into a bowl and cover it to allow fermentation in a warm area.

After 24 hours, check the fermentation; the ginger should be mushy and separating from the water.

Strain the mixture smoothly to remove ginger fiber.

If left to ferment longer (3-5 days), the sugar will start to turn into alcohol.

Serve the ginger beer cold, optionally adding rum.
