1

Into a blender/ food processor, add in the cubed ginger pieces and 1/3 cup of water. Blend well.

2

Strain the ginger juice into a bowl. Add in 1/4 cup of water into the blender, give it a swirl & strain that as well.

3

Rest the ginger juice for at least 30 mins aside to collect residue.

4

Into a saucepan, add sugar, water & place over medium heat stirring continuously until the sugar dissolves.

5

Keep boiling the sugar syrup until thick & syrupy. Once the desired consistency is reached, remove from heat & stir in the lemon/ lime juice. Stir well & let it sit for about 15 mins.

6

After 15 mins, pour in the ginger juice slowly into the sugar syrup without adding the white colored residue at the bottom. (It's fine if a little bit of residue drops)

7

Place mixture back over medium heat & keep stirring for about 4-5 mins until syrup is thick.

8

Then remove from heat & cool the syrup completely.

9

Once cooled completely, pour into an airtight container & refrigerate.

10

To serve, into a glass, add some ice cubes (optional), Homemade Ginger Beer syrup (to taste) & fill it up with plain water or soda water.
