Wash 1 kilo of ginger and roughly chop it without peeling.

Blend half of the ginger with some of the 3 liters of boiling water.

Add the blended ginger to a pot of boiling water.

Blend the second half of the ginger and add it to the pot.

Add 2 kilos of sugar to the boiling water and stir with a sanitized spoon.

Squeeze in 300 ml of lemon juice (or add fresh lemons if available).

Cover and let the mixture boil, then simmer for 40 minutes.

After 40 minutes, turn off the heat and let the mixture cool to room temperature.

Once cool, rinse out the fermenter with hot water and add a little water to the bottom.

Pour the ginger brew into the fermenter, ensuring to keep hands clean.

Wash more water through the ginger to extract more flavor.

Add the remaining 4 kilos of sugar to the fermenter and stir well.

Fill the fermenter with tap water up to the 23-liter mark.

Sprinkle 5 g of brewing yeast on top of the mixture without stirring.

Seal the fermenter with a lid and insert a bubbler filled with water.

Wait 7 days for fermentation to complete.
