Originating in the Caribbean, ginger beer has become a popular beverage in Sierra Leone, often enjoyed during celebrations and social gatherings. This refreshing drink showcases the vibrant flavors of ginger and is traditionally made at home, allowing for personal twists on sweetness and spice. Today, ginger beer is enjoyed globally, with many variations available commercially, yet homemade versions remain cherished for their authenticity and depth of flavor.

Kombucha starter can add probiotics.
Prepare the ginger bug by mixing 250ml of water, 10g of chopped ginger, and 10g of sugar. Repeat feedings daily until the ginger bug begins to foam.
For the ginger beer, steep 30g of ginger in 1L of water for 5 minutes.
Once cooled, add 100g of sugar and 50mL of strained ginger bug liquid to the mixture.
Ferment in a bottle at approximately 69ºF (20.5ºC) for 3 days.
Chill in the fridge before serving.
